As many of you know, one of our dishes we have to make each week is the Eggplant Moussaka, which has been a staple on our menu for as many years as I can remember. And it usually sells out fast! Well that is until we started to make a double batch. 'We' is actually just one cook – Rathin Boulton. No recipe is needed for him to make this dish, as it has been tweaked over the years to become firmly a Rathin creation.
Moussaka is a traditional Greek dish, this being of course a vegetarian version substituting ground mince with brown lentils. Moussaka is to the Eastern Mediterranean diet what lasagne is to the Italians.
My Rainbow-Dreams’ Eggplant Moussaka is layers of eggplant, potato, zucchini and brown lentils. The actually recipe is one I don't think could ever be written down, with a splash of this here and pinch of this there it is true to the origins of the dish – a delightful home cooked dish filled with love.
