Vegetable Madras is a flavoursome curry packed with abundant vegetables in a homemade curry powder – a mixture of turmeric, coriander seeds, cloves, peppercorns and cumin seeds to name just a few.
This curry is assumed to have originated in the south of India – however, you will not find a curry named Madras there. You won't even find one in Madras (now the city of Chennai) itself! Instead you will find the "Madras" curry on the menus of the innumerable Indian restaurants of England, Scotland and Wales, where the name is said to have been coined in the 1970s.
This is a wonderful example of the allure of a good curry, and one of the many good things that made its way to the UK from the British occupation of India. Typically this curry is hot, though the version offered at My Rainbow-Dreams is slightly toned down to accommodate Canberrans' more sensitive palate – however do let us know if you want some extra chilli added to bring out the full Madras Curry flavour and some warmth to the mouth!
