Today's Cake – Queen Latifah's Spiced Honey Cake

This lovely cake is from a New Zealand Cook Book, devised by a couple of beekeepers. This recipe was inspired when they were harvesting their rooftop hives. The “Queen” in the title refers to the queen bee; while Latifah is an Arabic given name, meaning 'gentle'. We are grateful to the bees who helped to bring this gentle, aromatic cake into life!

The fragrance of honey in our kitchen while this cake is baking is intoxicating … anyone who gets a serving of this cake should consider themselves very fortunate, as this is an item which has been known to magically disappear before even making it to the cake display cabinet!
